Leeks and beets
I pulled some leeks and beets from the FarmLab yesterday. The farm is in a weird transition: the winter crops never quite took off, and are still in the ground being harvested bit by bit. And for the summer, our local water authorities have called for VERY strict rationing, so it remains to be seen if we can replant our two acres of biodynamic farm here at General Hydroponics. Here’s my harvest from last night, the leeks were tender and delicious. I’m going to eat the beets tonight steamed with some goat cheese, walnuts, balsamic vinegar and black pepper. YUM!

Ooh, well, GH has always been low impact and sustainable, and we have long been working towards organics. Right now we operate two farms, one is Certified Organic, and the other is Biodynamic, if you use a definition like this one, from Wikipedia: “emphasizing balancing the holistic development and interrelationship of the soil, plants, animals as a closed, self-nourishing system.” Our Vice President, Kirstina Brooke attended Summerfield Waldorf School and Farm, so while the FarmLab doesn’t have spiritual rituals in Rudolf Steiner’s traditional sense, his influence is never far away.

The word “biodynamic” is more than a little out of context for GH.
